Mutton Curry




Ingredients:

Mutton-1/2 Kg
Onion-1 big
Garlic- 5 
Ginger grated
Turmeric powder-1/4 th tsp
Chilly powder-1/2 tsp
Coriander powder - 1 tsp
Curry Powder - 1 tsp
Salt to taste
Curry leaves - few
Coconut Milk
Jeera - 1/2 tsp
Sombh - Few (Big Jeera/ Sombhu/PerunJeeragam)
Oil-3 tsp
Cilantro for garnishing

Preparation:

1. Grind one part of the Onion, Ginger, Garlic, Sombh and curry Leaves into a coarse paste.
2. Cut the other part of the onion into thin slices.
3. Heat the pressure cooker, add oil, when heated add Jeera seeds and saute for a min and then add the paste (onion, Ginger, Garlic) fry untill the raw smell goes.
4. Add the washed and cleaned mutton to the paste and saute till the paste is mixed with the mutton pieces.
5. Add turmeric powder, chilly powder,coriander powder, curry powder, salt and mix.
6. Squeeze a small tomato into the gravy. Add coconut milk and little water and close the pressure cooker.
7. Leave it until the mutton is cooked. Usually I leave it for 5-6 whistles.
8. Once the pressure is gone, Open the cooker and check for the consistency of the curry.
9. If it is watery, stir the curry in heat for sometime.
10. Garnish with Cilantro.

Capsicum Curry

Ingredients:

Capsicum-2 Big
Onion-1 big(finely chopped)
Turmeric powder-1/4 th tsp
Chilly powder-1/2 tsp
Coriander powder - 1/2 tsp
Salt to taste
Curry leaves
Cumin seeds-1 tsp
mustard seeds - 1 tsp
Oil-3 tsp
Cilantro for garnishing

Preparation:

1. Cut the Onion into thin slices.
2. Cut the capsicum into small pieces.
3. Heat the pan, add oil, when heated add mustard seeds, cumin seeds,curry leaves and saute for a min and then add onions fry untill onions beecomes translucent.  
4. Add capsicum and fry for 2 min. Then add water.
5. Let the capsicum boil for some time.
6. Add salt, turmeric powder, chilly powder, coriander powder.
7. Stir until the gravy is ready.
